- 300g, freshly grated Coconut
- 400g Sugar
- 200ml Milk
- 40g Butter
- 6 pods, seeds ground Cardamom
- 50g, chopped Cashewoptional

Before you start
- This is the Anglo-Indian Christmas sweet, made alongside kul kuls and rose cookies and given away in tins.
- It is a sugar-stage recipe. Stop at the wrong moment and you get either syrup or a brick.
Method
- Boil the sugar and milk together until the sugar dissolves completely.
- Add the coconut and cook on medium, stirring constantly, for 20 minutes.Constantly. The bottom catches the moment you look away.
- Add the butter and cardamom and keep going until the mixture leaves the sides of the pan in one mass and a drop set in cold water holds its shape.
- Pour into a greased tray, scatter the cashew and press down flat.
- Mark into diamonds while still warm and cut through when cold.Mark warm, cut cold. Cutting it hot smears it; cutting it fully cold shatters it.
Storage
Keeps 2 weeks in an airtight tin at room temperature. It dries out slowly rather than spoiling, so eat it while it still yields.
