Ingredients

Quantities for 6.

  • 500g, thick and hung 2 hours Yogurthung, or it will not set
  • 200g Condensed Milk
  • 100ml Milk
  • 4 pods, seeds ground Cardamom
  • 2 tbsp, slivered Pistachiosoptional
  • a pinch Saffronoptional

Before you start

  • Three ingredients and one variable: how thick your yogurt is. Watery yogurt will not set no matter how long you steam it.
  • It should still wobble when you take it out. It firms in the fridge.

Method

  1. Hang the yogurt in muslin for 2 hours to drain off the whey.
  2. Whisk it smooth with the condensed milk, milk and cardamom. Do not aerate it.Whisk to combine, not to fluff. Air bubbles give a pitted surface.
  3. Pour into ramekins or a single dish and cover tightly with foil.
  4. Steam over simmering water 25 minutes, or bake in a water bath at 160C for 30 minutes.
  5. Test with a skewer: it should come out clean but the centre should still wobble.
  6. Cool, then refrigerate at least 4 hours. Top with pistachio and saffron before serving.

Storage

Keeps 3 days refrigerated. It is a set dairy custard, so keep it cold and do not leave it out.
