Ingredients

Quantities for 4.

  • 6 medium, about 700g, ripe and firm Tomato
  • 6 cloves, peeled Garlic3 roasted, 3 crushed raw
  • 3, finely chopped Green Chilli
  • 1 small, finely chopped Onion
  • 2 tbsp, raw Mustard Oil
  • to taste Salt
  • 0.25 tsp Black Saltoptional
  • 3 tbsp, chopped Coriander Leaves
  • 1 tsp, finely grated Gingeroptional

Before you start

  • Use ripe tomatoes with taut skin; watery ones turn the chokha into soup.
  • Thread 3 garlic cloves onto a skewer so you can char them on the flame alongside the tomatoes.
  • Have the onion and chilli chopped before you start roasting. This comes together in two minutes once the tomatoes are off the flame.

Method

  1. Set the tomatoes directly on a medium gas flame, resting them on the trivet.
  2. Roast 10 to 12 minutes, turning with tongs, until the skins are blackened and split and the tomatoes slump.Let them blacken properly. Pale roasting gives you sauce, not chokha.
  3. Char the skewered garlic for the last 3 minutes until the cloves are spotted brown and soft.
  4. Rest 5 minutes, then slip off and discard the blackened skins, saving any juice on the plate.
  5. Mash the tomato flesh and roasted garlic together with a fork into a coarse pulp.
  6. Crush the 3 raw garlic cloves with a pinch of salt and stir them in with the ginger.Raw garlic is what separates this from a cooked chutney. Do not skip it.
  7. Fold in the onion, green chilli, coriander leaves, salt, black salt and the raw mustard oil.
  8. Taste and serve at room temperature with litti, sattu paratha or a plate of khichdi.

Storage

Keeps 2 days refrigerated. Serve at room temperature and stir in a little fresh mustard oil before serving; it separates as it sits.
