Chakli
spiralled savoury crisps from a multi-grain flour, the centre of the Diwali faral

Ingredients

- 250g Rice Flour
- 60g Besan
- 40g, roasted and ground Urad Dal
- 2 tbsp Sesame
- 1 tsp Cumin Seeds
- 1/2 tsp Ajwain
- 1.5 tsp Chilli Powder
- 1/2 tsp Asafoetida
- 3 tbsp hot, for the dough, plus 500ml for frying Neutral Oilthe hot oil rubbed into the flour is what makes it crumble

- to taste Salt

Before you start
- Bhajani, the roasted multigrain flour, is what a Maharashtrian household uses. This is a workable version from separate flours.
- The hot oil moyan is not optional. Without it the chakli is hard rather than short.
Method
- Mix the flours with the sesame, cumin, ajwain, chilli powder, asafoetida and salt.
- Pour the hot oil over and rub it in until the mixture holds shape when pressed.It should clump in your fist and break cleanly.
- Add warm water gradually to a smooth, firm dough. Cover and rest 15 minutes.
- Press spirals onto a greased sheet with a chakli press.
- Fry on medium until the bubbling stops and they turn even gold, about 5 minutes.Medium, and do not crowd the pan. Rushed chaklis are raw inside.
- Drain and cool completely before storing.
Storage
Keeps 3 weeks in an airtight tin at room temperature.
