Ingredients

  • 250g Rice Flour
  • 60g Besan
  • 40g, roasted and ground Urad Dal
  • 2 tbsp Sesame
  • 1 tsp Cumin Seeds
  • 1/2 tsp Ajwain
  • 1.5 tsp Chilli Powder
  • 1/2 tsp Asafoetida
  • 3 tbsp hot, for the dough, plus 500ml for frying Neutral Oilthe hot oil rubbed into the flour is what makes it crumble

  • to taste Salt

Before you start

  • Bhajani, the roasted multigrain flour, is what a Maharashtrian household uses. This is a workable version from separate flours.
  • The hot oil moyan is not optional. Without it the chakli is hard rather than short.

Method

  1. Mix the flours with the sesame, cumin, ajwain, chilli powder, asafoetida and salt.
  2. Pour the hot oil over and rub it in until the mixture holds shape when pressed.It should clump in your fist and break cleanly.
  3. Add warm water gradually to a smooth, firm dough. Cover and rest 15 minutes.
  4. Press spirals onto a greased sheet with a chakli press.
  5. Fry on medium until the bubbling stops and they turn even gold, about 5 minutes.Medium, and do not crowd the pan. Rushed chaklis are raw inside.
  6. Drain and cool completely before storing.

Storage

Keeps 3 weeks in an airtight tin at room temperature.
