Ingredients

  • 600g steaks, 2cm thick Fisha firm fish; soft fillets break up
  • 2 tsp Chilli Powder
  • 1 tsp Turmeric
  • 1 tbsp paste Ginger
  • 1 tbsp paste Garlic
  • 1 Lemon
  • 3 tbsp Rice Flourthe crust; without it the spice slides off in the pan
  • 2 sprigs Curry Leaves
  • 6 tbsp, for shallow frying Neutral Oil
  • to taste Salt

Before you start

  • Rub the fish with the turmeric, salt, chilli, ginger, garlic and lemon juice, then cover and refrigerate 30 minutes.
  • Pat the pieces dry before they touch the oil. Wet fish steams instead of frying.

Method

  1. Toss the marinated fish in the rice flour so each piece carries a thin, even coat.
  2. Heat the oil until a pinch of flour sizzles at once. Lay the fish in without crowding the pan.Crowding drops the temperature and you get grey fish.
  3. Fry 4 minutes without moving it. Turn once, add the curry leaves to the oil, and fry 3 minutes more.Turning it repeatedly is how the crust ends up in the pan instead of on the fish.
  4. Drain on paper, squeeze over the rest of the lemon and serve hot with rice and a pulusu.

Storage

Best within the hour. It keeps a day refrigerated but the crust goes soft; crisp it briefly in a dry pan rather than a microwave.
