Before you start
- Rub the fish with the turmeric, salt, chilli, ginger, garlic and lemon juice, then cover and refrigerate 30 minutes.
- Pat the pieces dry before they touch the oil. Wet fish steams instead of frying.
Method
- Toss the marinated fish in the rice flour so each piece carries a thin, even coat.
- Heat the oil until a pinch of flour sizzles at once. Lay the fish in without crowding the pan.Crowding drops the temperature and you get grey fish.
- Fry 4 minutes without moving it. Turn once, add the curry leaves to the oil, and fry 3 minutes more.Turning it repeatedly is how the crust ends up in the pan instead of on the fish.
- Drain on paper, squeeze over the rest of the lemon and serve hot with rice and a pulusu.
Safe temperatures: Fish is done at 63°C / 145°F, or when it turns opaque and flakes easily. Reheat leftovers to 74°C / 165°F. FoodSafety.gov
Storage
Best within the hour. It keeps a day refrigerated but the crust goes soft; crisp it briefly in a dry pan rather than a microwave.
