Ingredients

Quantities for 2.

  • 1 medium, peeled and cubed Beetroot
  • 20g fresh, peeled Ginger
  • 1, juiced Orange
  • ½, juiced Lemon
  • a pinch Black Saltoptional

Method

  1. Blend the beetroot and ginger with 100ml water until completely smooth. A blender needs longer here than it looks like it should.
  2. Strain through a fine sieve or muslin, pressing hard. Beetroot pulp holds on to its juice.
  3. Stir in the orange and lemon juice and the black salt.
  4. Pour into two glasses.

Storage

Two days refrigerated. It will stain a plastic jug permanently; use glass.
