Ingredients

  • 2, grated Cucumber
  • 500g, whisked Yogurt
  • 1.5 tsp, roasted Cumin Powder
  • 1/2 tsp Black Salt
  • 1/2 tsp Chilli Powderoptional
  • a few leaves, chopped Mintoptional
  • a handful Coriander Leavesoptional
  • to taste Salt

Before you start

  • Salt the grated cucumber and squeeze it. Cucumber is mostly water and unsqueezed it turns the raita into a drink within twenty minutes.
  • Roast and grind the cumin yourself if you can. Pre-ground roasted cumin loses its point quickly.

Method

  1. Grate the cucumber coarsely, salt it lightly, and leave 10 minutes.
  2. Squeeze out the water firmly with your hands.Firmly. You should be left with about half the volume you started with.
  3. Whisk the yogurt until completely smooth, adding a spoon of water if it is very thick.
  4. Fold in the cucumber with roasted cumin, black salt and salt.
  5. Chill 20 minutes and finish with chilli powder, mint and coriander.Season again after chilling. Cold dulls salt.

Storage

Keeps a day refrigerated, though it loosens. Do not freeze.
