Before you start
- Bhurji is deliberately dry and crumbly, not soft and creamy. Cook the eggs harder than you would for a Western scramble.
- Salt the eggs only as they go in. Salted early, they weep.
Method
- Crackle the cumin in hot oil, then fry the onion 4 minutes until soft and just colouring.
- Add the green chilli and ginger, then the tomato, and cook 3 minutes until it breaks down.
- Add the turmeric and chilli powder and cook 30 seconds.
- Break the eggs straight into the pan, season, and stir constantly over medium heat.Straight into the pan, not beaten first: it gives the loose curds bhurji wants.
- Keep going 3 minutes until the eggs are dry and crumbly with no wet patches.
- Scatter coriander and eat immediately with pav or roti.

Storage
Eat straight away. Bhurji reheats badly and turns watery in the fridge.
