Ingredients

Quantities for 4.

  • 700g firm fillets, in 4cm chunks Fishfirm fish only: soft fillets fall through the grill
  • 150g, hung Yogurt
  • 2 tbsp, roasted Besanstops the marinade sliding off
  • 1 tsp Ajwainthe classic pairing with fish
  • 1 tbsp paste Ginger
  • 1 tbsp paste Garlic
  • 2 tsp Kashmiri Chilli
  • 1/2 tsp Turmeric
  • 1 tsp Chaat Masala
  • 2 Lemon
  • 2 tbsp, smoked and cooled Mustard Oil
  • to taste Salt

Before you start

  • Marinate fish for 30 minutes, not hours. Lemon and yogurt begin to cure it, and cured fish goes chalky on the grill.
  • Roast the besan first. Raw gram flour tastes of raw gram flour.

Method

  1. Pat the fish dry and rub with lemon juice, salt and turmeric. Rest 10 minutes, then pat dry again.Drying twice is what lets the marinade grip.
  2. Whisk the hung yogurt with roasted besan, ajwain, ginger, garlic, kashmiri chilli and the cooled mustard oil.
  3. Coat the fish and refrigerate 30 minutes only.
  4. Thread onto skewers or lay on an oiled rack and cook at 230C for 10 minutes.
  5. Finish under a hot grill for 3 minutes until the edges char.
  6. Dust with chaat masala and squeeze lemon over just before serving.

Storage

Eat within the hour; reheated fish tikka is dry. The marinated raw fish should be cooked the same day.
