Ingredients

Quantities for 1.

  • 1 medium, deseeded and chopped Bitter Gourdthe white pith inside is the bitterest part; leave it if you mean it
  • 1, juiced Lemon
  • 10g fresh Gingeroptional
  • ½ tsp Black Saltoptional
  • 1 tsp Honeyfor the faint-heartedoptional

Method

  1. Deseed the karela and chop it. Rubbing the pieces with salt and resting fifteen minutes draws out some bitterness, if that is what you want.
  2. Blend with 80ml water until smooth.
  3. Strain through a fine sieve, pressing the pulp.
  4. Stir in the lemon, ginger and black salt. Drink cold and fast.

Storage

Same day only. It grows more bitter as it sits.
