Ingredients

  • 400g, cold and not too sour Yogurt
  • 200ml, cold Water
  • 3 tbsp Sugarfor the sweet versionoptional

Before you start

  • Sweet and salted are not variations of one drink; they are two drinks. Do not try to make something in between.
  • The froth is the point. Churn hard, and serve before it settles.

Method

  1. Whisk the cold yogurt alone until completely smooth, with no lumps.
  2. Add the cold water gradually, whisking or blending, until it lightens and a head of foam forms.Gradually. Dumping the water in gives a thin, flat drink.
  3. For sweet lassi, add sugar, ground cardamom and a drop of rose water.
  4. For salted, add salt, black salt and roasted cumin instead.
  5. Churn once more to raise the foam and pour into chilled glasses.
  6. Serve at once, with the foam still standing.

Storage

Drink fresh. It separates within an hour and never quite recovers.
