- 300g, cold Yogurt
- 100ml, cold Milkoptional

Before you start
- Chill everything first. Ice thins the drink; cold ingredients keep it thick.
- Taste the mango before you add sugar. A good ripe mango may need none at all.
Method
- Cut the mango flesh away from the stone and chill it, along with the yogurt and milk.
- Blend the mango to a smooth puree on its own first.On its own, so any fibres break down before the yogurt is added.
- Add the cold yogurt, milk, sugar and the pinch of salt, and blend briefly.Briefly. Over-blending yogurt makes it thin and frothy.
- Taste and adjust the sugar.
- Pour into chilled glasses and finish with ground cardamom and a few saffron strands.
Storage
Drink within a few hours. It separates in the fridge; whisk to bring it back. Freezes well as kulfi-style lollies.
