Before you start
- Naga cooking uses very little oil and few spices; the flavour is carried by smoke, fermentation and heat. Adding garam masala here would be a mistake.
- Fermented bamboo shoot is pungent. Rinse it, and add it in stages, tasting as you go.
Method
- Rinse the fermented bamboo shoot in two changes of water and drain.
- Put the smoked pork in a pot with the ginger, garlic, chillies and just enough water to cover. Bring to a boil.No oil. The pork renders plenty of its own.
- Simmer covered 45-60 minutes until the pork is tender and the water has reduced by half.
- Add the bamboo shoot and the onion and tomato if using, and cook a further 15 minutes.Taste before adding all the bamboo. Its sourness varies enormously between batches.
- Season with salt only at the end; smoked pork is already salty.
- Serve with plain rice and a raw chilli on the side.
