Before you start

  • Naga cooking uses very little oil and few spices; the flavour is carried by smoke, fermentation and heat. Adding garam masala here would be a mistake.
  • Fermented bamboo shoot is pungent. Rinse it, and add it in stages, tasting as you go.

Method

  1. Rinse the fermented bamboo shoot in two changes of water and drain.
  2. Put the smoked pork in a pot with the ginger, garlic, chillies and just enough water to cover. Bring to a boil.No oil. The pork renders plenty of its own.
  3. Simmer covered 45-60 minutes until the pork is tender and the water has reduced by half.
  4. Add the bamboo shoot and the onion and tomato if using, and cook a further 15 minutes.Taste before adding all the bamboo. Its sourness varies enormously between batches.
  5. Season with salt only at the end; smoked pork is already salty.
  6. Serve with plain rice and a raw chilli on the side.
