- 800g on the bone, large pieces Chickenfree-range or older bird if you can, it is the point of the dish
- 40g, soaked in 300ml warm water Tamarind
- 3 medium, sliced Onion
- 2, chopped Tomato
- 6 Dried Red Chilli
- 2 tsp Coriander Powder
- 1/2 tsp Turmeric
- 2 sprigs Curry Leaves
- 5 tbsp Neutral Oil
- to taste Salt

Before you start
- Pulusu means sour. The tamarind is not a background note, it is the dish.
- Country chicken is tougher and better flavoured than broiler. If you use broiler, cut the cooking time by half.
Method
- Fry the onion in the oil until deep brown. Add the curry leaves and dried chillies.
- Add the chicken, turmeric and coriander powder and fry on high until the pieces colour, 8 minutes.
- Add the tomato and cook until it breaks down completely.
- Strain in the tamarind water, bring to a boil, then cover and simmer 40 minutes until the chicken is tender.It should stay thin. This is a gravy for pouring over rice, not for coating it.
- Season and rest 10 minutes. The sourness rounds out as it stands.

Storage
Keeps 3 days refrigerated and tastes better on day two. The tamarind keeps it stable. Reheat to a full simmer.
