Ingredients

  • 150g, diced Carrot
  • 100g, cut small French Beans
  • 100g Peas
  • 150g, small florets Cauliflower
  • 150g, diced Potato
  • 200g, cubed Paneer
  • 80g, soaked Cashew
  • 30g, blanched Almonds
  • 3 tbsp Raisins
  • 3 tbsp seeds, to finish Pomegranateoptional

  • 100ml Cream
  • 150ml Milk
  • 1 tbsp Ginger
  • 5 Cardamom
  • 1 tsp Garam Masala
  • 2 tsp Sugar
  • 4 tbsp Ghee

Before you start

  • Navratan means nine gems, and the count is the point: vegetables, paneer, nuts and dried fruit should all be identifiable.
  • No tomato and no chilli powder. The gravy is deliberately pale and mild; heat belongs in a different dish.

Method

  1. Boil the onion, ginger, cardamom and soaked cashews in 200ml water for 12 minutes, then blend to a smooth white paste.
  2. Blanch the carrot, beans, cauliflower and potato until just tender and refresh in cold water so they keep their colour.Refreshing matters. Vegetables left to sit hot go grey.
  3. Fry the paneer cubes in ghee until pale gold and set aside.
  4. Cook the white paste in the remaining ghee for 8 minutes without letting it colour.It must not brown. The colour of this dish is its signature.
  5. Add the milk, sugar and salt, and simmer to a coating consistency.
  6. Fold in the vegetables, paneer, almonds and raisins and warm through for 4 minutes.
  7. Finish off the heat with the cream and garam masala, and scatter pomegranate over.

Storage

Keeps 2 days refrigerated. The cream can split on hard reheating, so warm it gently. Do not freeze.
