Paneer Do Pyaza

- 100g, whisked Yogurt
- 1 tbsp paste Ginger
- 1 tbsp paste Garlic
- 2 tsp Coriander Powder
- 1.5 tsp Chilli Powder
- 1/2 tsp Turmeric
- 1 tsp Garam Masala
- 1 tbsp Kasuri Methi
- 4 tbsp Neutral Oil
- a handful Coriander Leavesoptional
- to taste Salt

Before you start
- The two onions do different jobs. The chopped one dissolves into the gravy; the petals go in at the end and must stay separate and sweet.
- Take the yogurt off the heat before it goes in, or it splits.
Method
- Fry the chopped onion in oil for 12 minutes until deep brown, then add ginger and garlic.
- Add the ground spices with a splash of water, then the tomato, and cook until the oil separates.
- Take the pan off the heat, whisk in the yogurt, and only then return it to a low flame.Off the heat, always. Yogurt added to a hot pan curdles instantly.
- Simmer 5 minutes with a little water to a thick gravy.
- In a separate pan sear the onion petals hard for 2 minutes so they colour but keep their bite, and add the paneer for a minute.
- Fold the petals and paneer through the gravy, add kasuri methi and garam masala, and rest 5 minutes off the heat.
Storage
Keeps 2 days refrigerated. The onion petals soften overnight, which loses the contrast the dish is named for.
