  • 500g Hunza, soaked overnight Dried Apricot
  • 1 cup, to taste Sugar
  • 3 Cardamomoptional
  • 1/2 Lemonoptional

Before you start

  • Use whole dried apricots with stones, not the bright orange sulphured halves. The stones are cracked and the kernels blanched and served on top.
  • Soak overnight. There is no shortcut that produces the same texture.

Method

  1. Soak the apricots in water overnight until plump. Keep the soaking water.
  2. Pit them, reserving the stones. Crack the stones and blanch the kernels; the skins slip off.
  3. Simmer the fruit in its soaking water with the sugar and cardamom over low heat, 30-40 minutes, until it collapses into a thick glossy compote.Mash some against the side of the pan and leave the rest in pieces.
  4. Sharpen with lemon if the apricots were very sweet.
  5. Cool. Serve at room temperature or chilled, topped with cream and the blanched kernels.

Storage

Keeps a week refrigerated and the flavour deepens. Freezes 3 months.
