Ingredients

Quantities for 2.

  • 15 fresh leaves Tulsidried tulsi works at half the quantity
  • 20g fresh, sliced Ginger
  • 4 peppercorns, cracked Black Pepper
  • 1 tsp Honeystirred in off the heat, not into boiling liquidoptional
  • a squeeze Lemonoptional

Method

  1. Bring 300ml water to the boil with the ginger and peppercorns.
  2. Lower the heat and simmer ten minutes, until the water has taken colour and reduced by about a third.
  3. Take off the heat, add the tulsi leaves and cover. Leave five minutes.
  4. Strain into two cups. Stir in the honey and lemon once it has stopped steaming hard.

Storage

Best fresh. It will reheat once without much loss.
